Almond Joy Rawnola

I really, really go ham on granola. I don't make it too often considering that it'll usually be gone within the next 24 hours (whoops). 

If you are like me and try to make everything yourself without using a recipe (hey you) and have burnt your beautiful creations to a crisp, this recipe completely by-passes that issue. This is more akin to play-doh funtime anti-baking. This entire recipe uses only your hands and a bowl. Huzzah. Adapted from Earthy Andy's rawnola

Enough blabbing, here's the goods:

Ingredients

1 C  Oats
1/2 C Dried Coconut
1/4 C Chocolate Chips
1 Tsp Vanilla
1/2 C Medjool Dates (I used date pieces)
2-4 Tablespoons of Honey

Pour all dry ingredients into a bowl. Break dates apart with your hands (if using whole dates). If your dates are dry, pre-soak them in water for a few minutes to re-hydrate. Add dates to the dry mixture and mix throughly. Really work the date mixture into the dry mixture. Start with 2 tablespoons of honey and use it as a binder for the mixture. Add more honey until your texture comes together in clumps (you can really add as much as you want, there are no real rules). Store in airtight container. Also delicious stored in the freezer. 

Eat slowly and chew loudly, life is short.
